I bought this at Jones The Grocer. Mostly because I saw it on the menu at a famous restaurant in Sydney. Ossau Iraty is a semi-hard sheep’s milk cheese from the French Basque Country, that tastes like a cow’s milk cheese. That was the first thing that popped in my head. Only on very close smelling did I detect the sheepish smell.

It’s not too strong but not light, somewhere smack in the middle, buttery in the mouth and kinda nutty. The rind stinks more than the pate and it’s kinda bitey/crumbly like most rinds but gives good contrast cos the pate is much smoother and flavorful.
